make these today

  • (taking a break from our journey to share this amazing recipe i made a few weeks ago and thought i'd posted)

  • once again, king arthur flour has the best recipes.
this one? for classic peanut butter cookies.
people, they are perfect.

i don't have a pretty picture to show you because we ate them so fast. so did anyone who came in their vicinity.

so what if it's 8 billion degrees out? you should totally turn on your oven and make a batch or two of these to share or just to eat all by yourself.

preheat oven to 350.

  • 1/3 cup shortening (or butter- which I used and makes them softer)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup supermarket-style smooth peanut butter 
  • 1 1/2 cups King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
bake for about 12-14 minutes, let cool, and then eat them all up.

Sidebars:

  • underbake, my friends. always underbake. 
  • cookies that you share taste extra good.
  • if you add little bits of jam these can be peanut butter and jelly cookies. i skip that and go straiight to chocolate chips, but honestly this recipe is perfect without add ins..
